We were in the midst of our usual morning routine, walking to the garage, when the Lass spied our first spring miracle... glorious garlic has sprouted. There are six rows of delightfully fresh green garlic tops at just three inches high that seemed to have come from who knows where. I swear that they were NOT there the day before. We have grand plans, that garlic & me.
A few of the tops will be snipped here and there to add a bit of fresh spring goodness to our salads and breakfasts.
Then come May, I'll harvest the twisty twirly scapes and whiz most of 'em into a simple garlic pesto to be frozen for the fall and winter soups.
Harvest time will happen around the end of August and I'll pick out the fattest, most delectable heads for planting, which will happen in October. I derive so much simple joy from this easy to grow herb/veg. Holy Moly, I love my garlic and my garlic loves me!

Thank you also for introducing me to 2 new things - I hadn't come across the Tangle a Day project, and neither had I heard of Eat to Live - I've just been looking up nutrition rich foods and found a lot of Eat to Live recipes on Pinterest. They look delicious!
